Coffee Cake

Ingredients

large bowl
1 cup butter
1.5 cups sugar
3 eggs
2 tsp. vanilla

small bowl 1
1 cup sour cream
0.5 tsp. baking soda

small bowl 2
3 cups flour
3 tsp. baking powder

small bowl 2 (after)
0.25 cups sugar
2 tsp. cinnamon

Directions

  1. Preheat oven to 350 degrees F.
  2. In large bowl, beat butter, sugar, eggs and vanilla until light and fluffy.
  3. In small bowl 1, dissolve baking soda in sour cream.
  4. In small bowl 2, combine flour and baking powder.
  5. Alternately add the contents of both small bowls to the batter.
  6. In small bowl 2, combine sugar and cinnamon.
  7. Pour 1/3 of batter into a greased 9 inch tube pan. Sprinkle 1/3 of cinnamon/sugar mixture over batter. Repeat twice more, ending with the sugar mixture.
  8. Bake at 350 degrees for 50 to 60 minutes.
  9. Cool for 5 minutes and remove from pan.

Banana bread

Ingredients

1/4 cup butter
1.5 cups sugar
2 eggs
1 tsp. baking soda
1/4 cup sour milk (3/4 tsp. lemon juice in a 1/4 cup measuring cup and add regular milk to fill it to top)
1.5 cups flour
1 tsp. baking powder
1 cup mashed ripe bananas

Directions

  1. Preheat oven to 350 F. Grease 8″ square pan.
  2. Beat butter, sugar and eggs until light an fluffy.
  3. In a separate dish, mix the baking soda & sour milk together. Then add it to your batter and beat well.
  4. Mix baking powder into flour.
  5. Alternate putting the bananas and the flour into the batter. Mix only until blended.
  6. Bake for 45 minutes. Check if it is done by inserting a toothpick into the banana bread. When it comes out clean, it is done.

Blueberry muffins

Ingredients

1.75 cups flour
0.75 cup sugar
1.5 tsp. baking powder
0.5 tsp. baking soda
0.75 cup orange juice
0.25 cup oil (canola)
1 egg
1.5 cups blueberries

Directions

Preheat oven to 350 F.

Combine dry ingredients in bowl. In a separate bowl, beat together orange juice, oil and eggs—use a fork or wisk.

Combine all ingredients. Stir in berries. Put in muffin pan (2/3 full).

Bake 25 to 30 minutes.
